Whether cooking for a holiday or large family gathering, we’re faced with the age-old challenge of eating the leftovers. Sometimes the very idea of eating the same thing over and over again has us bored to tears and ready to toss it all in the trash.

Repurposing leftovers helps reduce food waste, save time and create entirely new meals with minimal effort.

Start with a Strong Base: Grains

Grain foods are one of the easiest ways to transform leftovers. Each grain offers a unique texture and nutritional profile that can complement your leftovers in different ways.

  • Whole-grain bread: This hearty option is perfect for sandwiches or as a base for savory bread pudding. Rich in fiber and nutrients, whole grain bread provides a satisfying texture and depth of flavor that complements just about any leftover.
  • Quinoa: A protein-packed option, quinoa works beautifully with chopped proteins and roasted vegetables.
  • Rice: A universal base, rice can be the foundation for a comforting fried rice or a pilaf that repurposes meats, veggies and sauces.
  • Barley: With its chewy texture, barley is excellent in hearty soups and stews, making use of chicken, ham or turkey.
  • Couscous: Quick to cook, couscous is ideal for light salads, mixing well with veggies, cheeses and protein.

5 Easy Ways to Repurpose Leftovers

1. Turn It Into a Bowl

Combine leftover proteins, vegetables and grains into a simple bowl. Add a sauce or dressing to bring everything together. This works with almost any mix of ingredients.

2. Build a Better Sandwich

Sandwiches are one of the fastest ways to reuse leftovers. Layer roasted meats, vegetables and spreads on bread or rolls for a quick, satisfying meal.

Leftover proteins and vegetables can easily become a hearty soup. Use bones or veggie scraps to create broth, then add grains like barley or noodles for a complete meal.

4. Reinvent with Wraps or Pockets

Stuff leftovers into tortillas, pita or pastry dough. Bake or grill for handheld meals like wraps, calzones or empanadas.

5. Create a Breakfast Option

Leftovers are not just for lunch or dinner. Turn them into breakfast casseroles, savory waffles and toast toppings. This helps extend ingredients across multiple meals.

Leftovers & Food Safety

When it comes to gatherings and leftovers, keep these food safety tips in mind. Your stomach will thank you!

  • Keep hot foods hot: During the gathering, keep food out of the danger zone! Keep hot food at 140°F or warmer to prevent bacterial growth. Refrigerate leftovers within 2 hours after it’s removed from heat.
  • Keep cold foods cold: Cold foods should be kept at 40°F or below. Any foods left out for more than 2 hours at room temperature should be thrown out.
  • Store properly: Refrigerate or freeze leftover food in an airtight container as soon as possible. Refrigerated items can last 3-4 days or freeze for up to 3-4 months.
  • Thaw leftovers safely: Thaw leftovers in the refrigerator overnight or more quickly using cold water. Or cook from frozen using a microwave or on the stove.

Whether you’re starting a brand-new recipe or converting leftovers, the goal is to make leftovers feel like a new meal while reducing food waste.
