Thanksgiving Leftovers Breakfast Casserole

Thanksgiving Leftovers Breakfast Casserole

Ingredients

  • 6 large eggs
  • 6 ounces bread cubed
  • 1 1/2 cup shredded mozzarella or cheddar cheese divided
  • 1 cup 2% milk
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 2 cups leftover cooked vegetables cut into bite-sized pieces
  • 1 1/2 cup shredded leftover turkey or chicken

Instructions

  • Preheat the over to 350°F. Grease a 9×9-inch baking pan and set aside.
  • Whisk eggs in a large mixing bowl. Stir in bread, half the cheese, milk, paprika and salt. Fold in vegetables and turkey or chicken.
  • Pour into the prepared baking pan and top with remaining cheese.
  • Bake 40-45 minutes, or until the top is browned and firm. Remove from oven and let cool for 5-10 minutes before serving.
