Thanksgiving Leftovers Breakfast Casserole
Turn leftovers into this easy Thanksgiving breakfast casserole with turkey, stuffing and eggs. It is hearty, comforting, and perfect for feeding a crowd.

Ingredients
- 6 large eggs
- 6 ounces bread cubed
- 1 1/2 cup shredded mozzarella or cheddar cheese divided
- 1 cup 2% milk
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 2 cups leftover cooked vegetables cut into bite-sized pieces
- 1 1/2 cup shredded leftover turkey or chicken
Instructions
- Preheat the over to 350°F. Grease a 9×9-inch baking pan and set aside.
- Whisk eggs in a large mixing bowl. Stir in bread, half the cheese, milk, paprika and salt. Fold in vegetables and turkey or chicken.
- Pour into the prepared baking pan and top with remaining cheese.
- Bake 40-45 minutes, or until the top is browned and firm. Remove from oven and let cool for 5-10 minutes before serving.
