Tofu Gyros
These tofu gyros are packed with seasoned tofu, fresh vegetables and bold Mediterranean flavor for a satisfying, plant-based meal.

Ingredients
- 14 ounces firm tofu drained and crumbled, blot dry
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon olive oil
- 2 teaspoons Greek seasoning blend
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- 4 Romaine lettuce leaves chopped
- 2 Roma tomatoes diced
- ½ small red onion thinly sliced
- 2 pita breads halved
- 4 tablespoons prepared Tzatziki sauce
Instructions
- Preheat oven 400°F.
- Add tofu to a baking sheet. Drizzle with soy sauce, olive oil, Greek seasoning, garlic powder and cumin. Toss to coat and spread in even layer.
- Bake 30 minutes, stirring every 10 minutes, until golden brown.
- Assemble gyros layering tofu, lettuce, tomatoes and onions inside pita. Drizzle with Tzatziki.
