Tofu Gyros

These tofu gyros are packed with seasoned tofu, fresh vegetables and bold Mediterranean flavor for a satisfying, plant-based meal.

Tofu Gyros

Ingredients

  • 14 ounces firm tofu drained and crumbled, blot dry
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon olive oil
  • 2 teaspoons Greek seasoning blend
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • 4 Romaine lettuce leaves chopped
  • 2 Roma tomatoes diced
  • ½ small red onion thinly sliced
  • 2 pita breads halved
  • 4 tablespoons prepared Tzatziki sauce

Instructions

  • Preheat oven 400°F.
  • Add tofu to a baking sheet. Drizzle with soy sauce, olive oil, Greek seasoning, garlic powder and cumin. Toss to coat and spread in even layer.
  • Bake 30 minutes, stirring every 10 minutes, until golden brown. 
  • Assemble gyros layering tofu, lettuce, tomatoes and onions inside pita. Drizzle with Tzatziki.
