These tofu gyros are packed with seasoned tofu, fresh vegetables and bold Mediterranean flavor for a satisfying, plant-based meal.

Ingredients

firm tofu
drained and crumbled, blot dry

low-sodium soy sauce

olive oil

Greek seasoning blend

teaspoon
garlic powder

teaspoon
cumin

Romaine lettuce leaves
chopped

Roma tomatoes
diced

small
red onion
thinly sliced

pita breads
halved

prepared Tzatziki sauce
Instructions
Preheat oven 400°F.
Add tofu to a baking sheet. Drizzle with soy sauce, olive oil, Greek seasoning, garlic powder and cumin. Toss to coat and spread in even layer.
Bake 30 minutes, stirring every 10 minutes, until golden brown.
Assemble gyros layering tofu, lettuce, tomatoes and onions inside pita. Drizzle with Tzatziki.
