Tuscan White Bean and Tuna Sandwiches

Ingredients
- 3 tablespoons red wine vinegar
- 1 1/2 tablespoons olive oil
- 4 small ciabatta rolls sliced in half, toasted
- 1 (15 oz.) can navy beans drained, rinsed
- 1 (6 oz.) can solid white albacore tuna, packed in water drained
- 1/3 cup finely chopped red onion
- 2 cups baby spinach
Instructions
- Whisk vinegar and oil in a small bowl. Brush half over the cut sides of the rolls.
- Coarsely mash beans and tuna in a medium bowl. Add onions and remaining oil/vinegar.
- Divide spinach among the bottom roll halves. Top with the tuna and the remaining roll halves.
