Tuscan White Bean and Tuna Sandwiches

These Tuscan tuna sandwiches combine white beans, tuna, and fresh herbs for a hearty, protein-rich Mediterranean-inspired meal.

Tuscan White Bean and Tuna Sandwiches

Ingredients

  • 3 tablespoons red wine vinegar
  • 1 1/2 tablespoons olive oil
  • 4 small ciabatta rolls sliced in half, toasted
  • 1 (15 oz.) can navy beans drained, rinsed
  • 1 (6 oz.) can solid white albacore tuna, packed in water drained
  • 1/3 cup finely chopped red onion
  • 2 cups baby spinach

Instructions

  • Whisk vinegar and oil in a small bowl. Brush half over the cut sides of the rolls.
  • Coarsely mash beans and tuna in a medium bowl. Add onions and remaining oil/vinegar.
  • Divide spinach among the bottom roll halves. Top with the tuna and the remaining roll halves.
