Green Goddess Veggie Sandwich
Green Goddess dressing, tangy herbed goat cheese and fresh, crisp vegetables pair for a crunchy and satisfying sandwich.

Ingredients

- 12 slices whole wheat bread toasted
- 1/2 cup Green Goddess salad dressing
- 6 ounces herbed goat cheese
- 3 avocados sliced
- 3 European cucumbers peeled, thinly sliced
- 2 Heirloom tomatoes sliced
- 1 heart Romaine lettuce finely chopped
Instructions
- Lay bread on large cutting board.
- Spread Green Goddess dressing on 6 slices of bread.
- Spread goat cheese on remaining 6 slices of bread. Layer with avocado, cucumber, tomatoes and lettuce. Season with salt and pepper, to taste.
- Top sandwiches with slices of bread with Green Goddess dressing, dressing side down.
