Grilled Cheese with Peaches

This grilled cheese packs an unexpected twist with the sweetness of canned peaches! Not only is this sandwich a quick and easy lunch, but also a fun way to add more fruit and veggies to your day.

Grilled Cheese with Peaches

Ingredients

  • 4 teaspoons vegetable oil
  • 8 slices whole grain bread
  • 8 slices low-fat cheddar cheese
  • 2 cups spinach
  • 1 (15 oz.) can sliced peaches packed in juice, drained

Instructions

  • Heat oil in a large non-stick pan over medium heat. Add 4 slices of bread. Layer with 1 slide cheese, spinach, peach slices, 1 slice of cheese and 1 slice of bread.
  • Cook 4-5 minutes, flip each sandwich and cook additional 4-5 minutes, or until browned on both side and cheese is melted.
