Chopped Quinoa Salad

Chopped salad gets a boost with nutrient-dense quinoa. This salad can easily be made as part of a meal prep session and enjoyed for lunch or dinner throughout the week.

Chopped Quinoa Salad

Ingredients

  • 2 cups quinoa cooked and cooled
  • 3 Roma tomatoes chopped
  • 2 cucumbers chopped
  • 1 red onion chopped
  • 1 avocado chopped
  • 1/2 cup kalamata olives chopped
  • 3 tablespoons chopped mint leaves
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar

Instructions

  • In a large bowl, add quinoa, tomatoes, cucumber, onion, avocado, olives, mint, lemon juice, olive oil and vinegar. Toss until combined.
