Chopped Quinoa Salad
Chopped salad gets a boost with nutrient-dense quinoa. This salad can easily be made as part of a meal prep session and enjoyed for lunch or dinner throughout the week.
Prep Time: 15 minutes

Ingredients
- 2 cups quinoa cooked and cooled
- 3 Roma tomatoes chopped
- 2 cucumbers chopped
- 1 red onion chopped
- 1 avocado chopped
- 1/2 cup kalamata olives chopped
- 3 tablespoons chopped mint leaves
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
Instructions
- In a large bowl, add quinoa, tomatoes, cucumber, onion, avocado, olives, mint, lemon juice, olive oil and vinegar. Toss until combined.
