Mexican Rice with Chicken

This easy Mexican rice with chicken is a flavorful, easy side dish with bold spices that pairs well with tacos, chicken or weeknight meals.

South of the Border Rice

Ingredients

  • 1 (14 oz.) can chicken broth
  • 1 cup long grain rice
  • 1 teaspoon cumin
  • 2 cups cooked, shredded chicken breast
  • 1 (14 oz.) can diced tomatoes with chili seasonings undrained
  • 1 cup frozen corn thawed

Instructions

  • Bring chicken broth, rice and cumin to a boil in a pot. Cover and simmer 15-20 minutes, or until liquid is absorbed and rice is cooked.
  • Stir in chicken, tomatoes and corn. Cook additional 2-3 minutes, or until liquid from tomatoes is absorbed and ingredients are heated.
