Mexican Rice with Chicken
This easy Mexican rice with chicken is a flavorful, easy side dish with bold spices that pairs well with tacos, chicken or weeknight meals.

Ingredients
- 1 (14 oz.) can chicken broth
- 1 cup long grain rice
- 1 teaspoon cumin
- 2 cups cooked, shredded chicken breast
- 1 (14 oz.) can diced tomatoes with chili seasonings undrained
- 1 cup frozen corn thawed
Instructions
- Bring chicken broth, rice and cumin to a boil in a pot. Cover and simmer 15-20 minutes, or until liquid is absorbed and rice is cooked.
- Stir in chicken, tomatoes and corn. Cook additional 2-3 minutes, or until liquid from tomatoes is absorbed and ingredients are heated.
