Tomato Panzanella Salad

Toasted bread is tossed with ripe tomatoes, freshly shaved Parmesan cheese and drizzled with a tangy dressing to create this perfect, fresh side dish.

Ingredients

  • 1 loaf crusty bread (Italian, sourdough, ciabatta), cut into 1-inch cubes
  • 5 large tomatoes chopped
  • 1 small red onion thinly sliced
  • 1 cup Italian dressing
  • 4 ounces shaved Parmesan cheese
  • 1/4 cup chopped fresh basil

Instructions

  • Preheat oven to 250°F.
  • Add bread to a baking sheet and bake 10-15 minutes, or until dry and toasty.
  • In a large bowl, add bread, tomatoes, onions, dressing, cheese and basil. Toss well to coat.
  • Let sit 20 minutes before serving to marinade.
