Tomato Panzanella Salad
Toasted bread is tossed with ripe tomatoes, freshly shaved Parmesan cheese and drizzled with a tangy dressing to create this perfect, fresh side dish.
Prep Time: 20 minutes

Ingredients
- 1 loaf crusty bread (Italian, sourdough, ciabatta), cut into 1-inch cubes
- 5 large tomatoes chopped
- 1 small red onion thinly sliced
- 1 cup Italian dressing
- 4 ounces shaved Parmesan cheese
- 1/4 cup chopped fresh basil
Instructions
- Preheat oven to 250°F.
- Add bread to a baking sheet and bake 10-15 minutes, or until dry and toasty.
- In a large bowl, add bread, tomatoes, onions, dressing, cheese and basil. Toss well to coat.
- Let sit 20 minutes before serving to marinade.
