Asian Vegetables Rice Bowl
This recipe puts fresh veggies in their element, sautéeing them in a spicy hoisin peanut sauce. Use your imagination or whatever vegetables you have in the fridge and add your favorite lean protein like chicken, shrimp or tofu!

Ingredients
- 1 tablespoon vegetable oil
- 2 cups chopped broccoli florets
- 1 small onion thinly sliced
- 1 red bell pepper chopped
- 1 cup sugar snap peas
- 1/4 cup BBQ sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon peanut butter
- 1 pinch dried red pepper flakes
- 2 cups cooked brown rice
Instructions
- Heat oil in a large skillet over medium heat. Add broccoli, onion, peppers and snap peas. Cook 3-5 minutes, or until crisp-tender.
- Mix BBQ sauce, hoisin sauce and peanut butter in a small bowl. Add to pan and mix well. Cook until hot.
- Portion rice into 4 bowls. Top evenly with vegetables.
