Asian Vegetables Rice Bowl

This recipe puts fresh veggies in their element, sautéeing them in a spicy hoisin peanut sauce. Use your imagination or whatever vegetables you have in the fridge and add your favorite lean protein like chicken, shrimp or tofu!

Asian Vegetables Rice Bowl

Ingredients

  • 1 tablespoon vegetable oil
  • 2 cups chopped broccoli florets
  • 1 small onion thinly sliced
  • 1 red bell pepper chopped
  • 1 cup sugar snap peas
  • 1/4 cup BBQ sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon peanut butter
  • 1 pinch dried red pepper flakes
  • 2 cups cooked brown rice

Instructions

  • Heat oil in a large skillet over medium heat. Add broccoli, onion, peppers and snap peas. Cook 3-5 minutes, or until crisp-tender.
  • Mix BBQ sauce, hoisin sauce and peanut butter in a small bowl. Add to pan and mix well. Cook until hot.
  • Portion rice into 4 bowls. Top evenly with vegetables.
