Cheesy Black Bean Toast with Pico de Gallo (Molcahetes)

Cheesy Black Bean Toast with Pico de Gallo (Molcahetes)

Ingredients

  • 6 Roma tomatoes diced
  • 2 serrano or jalapeño peppers finely chopped
  • 1 clove garlic finely minced
  • 1 lime juiced
  • 1/2 medium onion finely chopped
  • 3 tablespoon chopped fresh cilantro
  • 1/8 teaspoon oregano
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 Kaiser rolls sliced in half lengthwise
  • 1 (16 oz.) can seasoned lowfat refried black beans
  • 2 cups shredded Chihuahua or mozzarella cheese
  • 1/2 Hass avocado diced

Instructions

  • Preheat oven to 350°F.
  • In a medium bowl, combine tomatoes, peppers, garlic, lime juice, onion, cilantro, oregano, salt and pepper. Set aside.
  • Place bottom half of rolls on a baking sheet. Spread refried beans on top and sprinkle with cheese.
  • Bake 5-8 minutes, or until cheese is melted and hot. Top with pico de gallo and avocado.
