Citrus Tuna Melt Sandwich

This warm toasted open-faced tuna melt sandwich is easy to make and even better to eat.

Citrus Tuna Melt Sandwich

Ingredients

  • 12 ounces canned tuna packed in water, drained
  • 1/2 cup diced onion
  • 1/2 cup diced apple
  • 1/4 cup diced tomatoes
  • 1/4 cup diced celery
  • 1/4 cup chopped fresh parsley or cilantro
  • 2 tablespoons lemon juice
  • 1/4 teaspoon black pepper
  • 6 slices whole grain bread
  • 6 slices American cheese
  • 6 slices tomatoes
  • 6 lettuce leaves

Instructions

  • Preheat oven to 350°F.
  • Combine tuna, onion, apple, tomatoes, celery, lemon juice, parsley or cilantro, and pepper in a medium bowl. Mix well.
  • Lightly toast the bread, then place on baking sheet. Top evenly with tuna and a slice of cheese. Bake 3 minutes or until tuna is warmed and cheese is melty.
  • Remove from oven and top with tomato and lettuce.
