Cuban-Syle Grilled Turkey Sandwich

Whole grain bread stuffed with turkey, cheese and spinach makes this Cuban-inspired sandwich a delight.

Cuban-Syle Grilled Turkey Sandwich

Ingredients

  • 2 tablespoons pickle relish drained
  • 1 teaspoon fresh-squeezed orange juice
  • 1/2 teaspoon sugar
  • 4 slices whole grain bread
  • 2 slices lowfat Swiss cheese
  • 2 ounces deli-sliced turkey breast
  • 1/2 cup fresh baby spinach

Instructions

  • Combine relish, orange juice and sugar in a small bowl.
  • Spray large skillet or grill pan with cooking spray and heat over medium-high heat. Add 2 slices of bread and layer with cheese, turkey and spinach, dividing ingredients equally. Spread relish mixture on remaining bread slices and place sauce-side-down on top.
  • Cook 2-3 minutes per side, or until cheese begins to melt.
