Tuscan White Bean and Tuna Sandwiches

These Tuscan tuna sandwiches combine white beans, tuna, and fresh herbs for a hearty, protein-rich Mediterranean-inspired meal.

red wine vinegar

ciabatta rolls
sliced in half, toasted
1 (15 oz.)
can
navy beans
drained, rinsed
1 (6 oz.)
can
solid white albacore tuna, packed in water
drained
1/3
cup
finely chopped red onion

baby spinach
Instructions
Whisk vinegar and oil in a small bowl. Brush half over the cut sides of the rolls.
Coarsely mash beans and tuna in a medium bowl. Add onions and remaining oil/vinegar.
Divide spinach among the bottom roll halves. Top with the tuna and the remaining roll halves.
