Caprese Grilled Chicken Sandwich

Grilled chicken paired with juicy tomatoes, fresh mozzarella, basil and a homemade pesto mayo for a delicious handheld meal you won't be able to put down.

Caprese Grilled Chicken Sandwich

Ingredients

  • 2 tablespoons mayonnaise
  • 1 tablespoon pesto
  • 1/2 teaspoon lemon juice
  • 1 chicken breast pounded to even thickness and cut in half
  • 1 teaspoon olive oil
  • 1/4 teaspoon Garlic salt
  • 1/8 teaspoon black pepper
  • 2 KING'S HAWAIIAN Original Hawaiian Sweet Hamburger Buns
  • 2 slices fresh mozzarella cheese
  • 2 slices tomato
  • Balsamic glaze for drizzle
  • 6 large fresh basil leaves

Instructions

  • Mix mayonnaise, pesto and lemon juice in small bowl. Set aside.
  • Preheat a grill pan or grill to medium heat. Drizzle chicken with olive oil and season with garlic salt and pepper. Cook 5-6 minutes per side, or until the chicken is cooked through. Remove from heat.
  • Grill buns face down until golden brown. Remove from heat
  • Add pesto mayonnaise to the bottom bun. Top with chicken, tomato and mozzarella. Drizzle with balsamic glaze and fresh basil.
