Caprese Grilled Chicken Sandwich
Grilled chicken paired with juicy tomatoes, fresh mozzarella, basil and a homemade pesto mayo for a delicious handheld meal you won't be able to put down.

Ingredients
- 2 tablespoons mayonnaise
- 1 tablespoon pesto
- 1/2 teaspoon lemon juice
- 1 chicken breast pounded to even thickness and cut in half
- 1 teaspoon olive oil
- 1/4 teaspoon Garlic salt
- 1/8 teaspoon black pepper
- 2 KING'S HAWAIIAN Original Hawaiian Sweet Hamburger Buns
- 2 slices fresh mozzarella cheese
- 2 slices tomato
- Balsamic glaze for drizzle
- 6 large fresh basil leaves
Instructions
- Mix mayonnaise, pesto and lemon juice in small bowl. Set aside.
- Preheat a grill pan or grill to medium heat. Drizzle chicken with olive oil and season with garlic salt and pepper. Cook 5-6 minutes per side, or until the chicken is cooked through. Remove from heat.
- Grill buns face down until golden brown. Remove from heat
- Add pesto mayonnaise to the bottom bun. Top with chicken, tomato and mozzarella. Drizzle with balsamic glaze and fresh basil.
