Homemade Sloppy Joes

A lighter take on sloppy joes, this version is made with lean protein and bold flavor. They are messy, satisfying and perfect for weeknight dinners.

Homemade Sloppy Joes

Ingredients

  • 1 pound ground turkey, beef or plant-based alternative
  • 1 cup chopped mushrooms
  • ½ cup chopped onion
  • ½ cup chopped green pepper
  • 1 teaspoon garlic powder
  • 1 cup canned pumpkin (NOT pumpkin pie filling)
  • 1 cup ketchup
  • 2 tablespoons yellow mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder
  • 8 hamburger buns

Instructions

  • Heat a large skillet over medium heat. Add meat, mushrooms, onions, peppers and garlic powder. Cook 5-7 minutes, or until meat is cooked through. Drain and return to skillet.
  • Add pumpkin, ketchup, mustard, brown sugar and chili powder. Bring to a boil, reduce heat and simmer, uncovered, 10 minutes. 
  • Add sloppy joe meat to buns.
