Homemade Sloppy Joes
A lighter take on sloppy joes, this version is made with lean protein and bold flavor. They are messy, satisfying and perfect for weeknight dinners.

Ingredients
- 1 pound ground turkey, beef or plant-based alternative
- 1 cup chopped mushrooms
- ½ cup chopped onion
- ½ cup chopped green pepper
- 1 teaspoon garlic powder
- 1 cup canned pumpkin (NOT pumpkin pie filling)
- 1 cup ketchup
- 2 tablespoons yellow mustard
- 1 tablespoon brown sugar
- 1 tablespoon chili powder
- 8 hamburger buns
Instructions
- Heat a large skillet over medium heat. Add meat, mushrooms, onions, peppers and garlic powder. Cook 5-7 minutes, or until meat is cooked through. Drain and return to skillet.
- Add pumpkin, ketchup, mustard, brown sugar and chili powder. Bring to a boil, reduce heat and simmer, uncovered, 10 minutes.
- Add sloppy joe meat to buns.
