Vegetarian Ratatouille Pasta

This vegetarian ratatouille pasta is packed with fresh vegetables and rich flavor for a simple, healthy, plant-based dish.

Vegetarian Ratatouille Pasta

Ingredients

  • 16 ounces gemelli pasta
  • 2 tablespoons olive oil
  • 1 cup chopped yellow onion
  • 1 large zucchini chopped
  • 1 red bell pepper chopped into 1-inch cubes
  • 3 cloves garlic chopped
  • 1 cup tomato juice
  • 1 tablespoon chopped fresh basil or 1 tsp dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt-free all-purpose seasoning
  • 1 cup chopped tomatoes

Instructions

  • Cook pasta according to package directions. Drain and set aside.
  • Heat oil in large skillet over medium heat. Add onions, zucchini, peppers and garlic. Cook 3-5 minutes, or until vegetables are tender.
  • Stir in tomato juice, basil, Italian seasoning, red pepper flakes and all-purpose seasoning. Bring to a simmer and cook, uncovered, 8-10 minutes, or until liquid is almost absorbed. Add tomatoes and cook 2-3 minutes.
  • Gently fold in prepared pasta.
