Spiced Rice Pilaf
This spiced rice pilaf is a warm, aromatic side dish with savory flavor that is easy to make and perfect alongside chicken, beef or vegetables.

Ingredients
- 3 tablespoons olive oil
- 1 small onion chopped
- 4 cloves garlic minced
- 1 1/2 cup basmati rice
- 2 cups vegetable stock
- 1 cup water
- 1/8 teaspoon saffron
- 6-7 curry leaves
- 2 teaspoons cardamom pods
- 1 teaspoon cloves
- 1/4 teaspoon cumin
- 1/2 cup frozen peas thawed
- 1/2 cup diced red bell peppers
- 1 tablespoon black sesame seeds
Instructions
- Heat oil in a saucepot over medium heat. Add onion and garlic. Cook 4-5 minutes, or until softened. Add rice, stock, water and saffron. Bring to a boil.
- Add curry leaves, cardamom, cloves and cumin. Lower heat and simmer, covered, 15-18 minutes, or until liquid has been absorbed and rice is cooked.
- Garnish with peas, peppers and sesame seeds.
