Salmon Caesar Salad Sandwiches

Flaky salmon meets crisp romaine and creamy Caesar dressing in this easy sandwich that's fresh, protein-packed and perfect for a quick lunch.

Salmon Caesar Salad Sandwiches

Ingredients

  • 12 ounces salmon fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 whole wheat bagels
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup light mayonnaise
  • 1/4 cup creamy Caesar dressing
  • 2 cups shredded romaine lettuce

Instructions

  • Preheat broiler.
  • Place salmon fillets parchment-lined baking sheet. Season with salt and pepper.
  • Broil 10-12 minutes, or until fish is cooked through. Separate salmon into chunks with fork and cool slightly.
  • Meanwhile, brush cut sides of bagels lightly with oil and sprinkle evenly with garlic powder and cheese. Place in single layer on baking sheet. Broil 2 minutes, or until toasted.
  • Combine mayonnaise and caesar dressing in large bowl. Add lettuce and toss to combine. Gently fold in salmon.
  • Divide salad evenly among bagel bottoms and add tops to make a sandwich.
