Grilled Mojito Chicken Sandwich
Fire up the grill to prep the perfect (and perfectly refreshing) mojito chicken sandwich with lime, chiles and mint.

Ingredients
- 2 tablespoons low at mayonnaise
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped fresh mint
- 1 teaspoon lime zest
- 1/2 teaspoon minced serrano chili
- 1/4 teaspoon sugar
- 6 ounces boneless, skinless chicken breast
- 1 small white onion cut into 1/4-inch thick slices
- 4 slices whole grain bread
- 1/4 cup fresh mint leaves
- 2 lettuce leaves
Instructions
- Preheat grill or grill pan to medium-high heat.
- Combine mayonnaise, lime juice, chopped mint, lime zest, chilies and sugar in small bowl. Set aside.
- Season chicken with salt and pepper. Add chicken and onion to grill and cook 4-5 minutes per side, or until internal temperature reaches 165°F. If desired, add slices of bread last 2-3 minutes to toast.
- Spread 2 slices of bread with mayonnaise mixture, dividing evenly. Slice chicken and place on top along with mint leaves, grilled onion and lettuce. Top with remaining 2 bread slices, creating 2 sandwiches.
