Sausage and Mushroom Rotini
This rotini with sausage and mushrooms is a hearty pasta made with whole grain rotini, chicken sausage and savory vegetables — flavorful, satisfying and ready in just 20 minutes.

Ingredients
- 1 (14 oz.) box whole grain rotini
- 1 tablespoon olive oil
- 1 pound chicken sausage sliced
- 2 cups sliced mushrooms
- 1 cup thinly sliced leeks
- 1 cup thinly sliced green onions
- 1 cup chicken stock
- 1 cup grated Romano cheese
- 1/4 cup chopped parsley
- 1/8 teaspoon dried tarragon
Instructions
- Prepare pasta according to package directions. Drain and transfer to a large bowl.
- Meanwhile, heat oil in a large skillet over medium heat. Add sausage and cook 2-3 minutes, or until well browned. Add mushrooms, leeks and onions, and cook 5-6 minutes, or until tender. Add chicken stock and simmer 3-5 minutes.
- Add sausage and vegetables to warm pasta. Add cheese, parsley and tarragon. Toss to combine. Season with salt and pepper, to taste.
