Mediterranean Tuna Salad Sandwich
Tuna, artichokes and white beans tossed with flavorful basil pesto create a delicious twist on tuna salad.

Ingredients
- 1 (12 oz.) can tuna packed in water, drained
- 1 (15 oz.) can white beans drained, rinsed
- 1 (14 oz.) can artichoke hearts drained, chopped
- ¼ cup pesto
- ¼ cup lowfat mayonnaise
- 2 tablespoons lemon juice
- ¼ teaspoon black pepper
- 6 lettuce leaves
- 6 slices whole grain bread toasted
Instructions
- Mix tuna, beans, artichoke hearts, pesto, mayonnaise, lemon juice and pepper in medium bowl until well combined.
- Assemble 3 sandwiches with 2 lettuce leaves and ½ cup tuna salad each.
