Veggie Sandwich
Skip meat without skipping out on flavor. Try a veggie sandwich that’s just as satisfying thanks to hummus, pesto and plenty of veggies on a hearty whole wheat bread

Ingredients
- 4 slices whole grain bread toasted
- 1/3 cup hummus
- 2 tablespoons feta cheese
- 1/2 red bell pepper thinly sliced
- 2 thin slices red onion
- 2 slices tomato
- 1/2 cup spinach
- 1 1/2 teaspoons pesto
Instructions
- Spread hummus over 2 slices of bread. Top with feta cheese and layer with peppers, onion, tomato and spinach.
- Spread pesto on remaining slices of bread and place sauce-side-down on top of vegetables.
