Veggie Sandwich

Skip meat without skipping out on flavor. Try a veggie sandwich that’s just as satisfying thanks to hummus, pesto and plenty of veggies on a hearty whole wheat bread

Veggie Sandwich

Ingredients

  • 4 slices whole grain bread toasted
  • 1/3 cup hummus
  • 2 tablespoons feta cheese
  • 1/2 red bell pepper thinly sliced
  • 2 thin slices red onion
  • 2 slices tomato
  • 1/2 cup spinach
  • 1 1/2 teaspoons pesto

Instructions

  • Spread hummus over 2 slices of bread. Top with feta cheese and layer with peppers, onion, tomato and spinach.
  • Spread pesto on remaining slices of bread and place sauce-side-down on top of vegetables.
