Cranberry, Garlic and Walnut Stuffing

Ingredients

  • 2 1/2 cups water (or vegetable/chicken stock)
  • 4 tablespoon olive oil divided
  • 1/2 yellow onion minced
  • 6 cloves garlic minced
  • 3 tablespoons butter
  • 4 1/2 cups garlic croutons divided
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Instructions

  • In a large pot, bring the water to a boil.
  • In a separate pan, heat 2 Tbsp. oil over medium heat. Add onion and garlic. Cook 2-3 minutes, or until fragrant.
  • Once water begins to boil, add garlic and onion, butter and 2 Tbsp. oil. Add 4 cups croutons and continue to stir until all of the liquid is absorbed, about 6-10 minutes. Stir in dried cranberries and walnuts. Stir in the extra 1/2 cup croutons until everything is blended.
