Veggie Grilled Cheese Sandwich

The comfort of a grilled cheese but loaded with veggies? Count us in! Onions, mushrooms and asparagus pair with Brie and Provolone cheese for a decadent sandwich you'll love.

Veggie Grilled Cheese Sandwich

Ingredients

  • 3 tablespoons butter softened, divided
  • 1/2 yellow onion thinly sliced
  • 4 asparagus spears trimmed, cut in half crosswise
  • 1/3 cup sliced Cremini or button mushrooms
  • 1/4 teaspoon minced garlic
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 slices KING'S HAWAIIAN Honey Wheat Sliced Bread
  • 2 ounces Brie cheese sliced
  • 1 slice Provolone cheese

Instructions

  • Heat 1 Tbsp. butter in skillet over medium heat. Add onion and cook 5-6 minutes, or until softened. Add asparagus, mushrooms, garlic, salt and pepper. Cook 3-4 minutes, or until mushrooms soften. Transfer veggies to a plate and set aside.
  • Whip out skillet and return to medium-low heat. Spread 1 Tbsp. butter on each slice of bread. Place one slide, butter side down, in skillet. Layer with Brie, sautéed vegetables, then Provolone. Add second slice of bread, butter side up.
  • Cook 3-4 minutes per side, or until evenly browned and cheese is melted.
