Citrus Tuna Melt Sandwich
This warm toasted open-faced tuna melt sandwich is easy to make and even better to eat.

Ingredients
- 12 ounces canned tuna packed in water, drained
- 1/2 cup diced onion
- 1/2 cup diced apple
- 1/4 cup diced tomatoes
- 1/4 cup diced celery
- 1/4 cup chopped fresh parsley or cilantro
- 2 tablespoons lemon juice
- 1/4 teaspoon black pepper
- 6 slices whole grain bread
- 6 slices American cheese
- 6 slices tomatoes
- 6 lettuce leaves
Instructions
- Preheat oven to 350°F.
- Combine tuna, onion, apple, tomatoes, celery, lemon juice, parsley or cilantro, and pepper in a medium bowl. Mix well.
- Lightly toast the bread, then place on baking sheet. Top evenly with tuna and a slice of cheese. Bake 3 minutes or until tuna is warmed and cheese is melty.
- Remove from oven and top with tomato and lettuce.
