Vegetable Tortilla Casserole
This vegetable tortilla casserole layers tortillas, veggies, eggs and cheese into a hearty, easy breakfast or brunch.
Prep Time: 15 minutes

Ingredients
- 4 corn tortillas
- 1 cup any combination of the following ingredients: chopped green onions, bell peppers, mushrooms, tomatoes or nopales.
- 1 cup shredded Mexican-style cheese
- 4 large eggs
- 1 teaspoon salt
Instructions
- Preheat oven at 350ºF.
- Cut each tortilla into 4 triangles. Arrange in a single layer baking sheet and bake 5-8 minutes, or until crisp. Transfer to an 8×8-inch glass baking dish.
- Top tortillas and vegetables and cheese. Whisk eggs and salt in a medium bowl and pour over top. Toss to mix well.
- Bake 10-12 minutes, or until eggs are set. Serve with salsa, fresh cilantro or parsley, if desired.
