Raisin Scones

Easy homemade raisin scones with oats and cinnamon sugar — soft, crumbly and ready in 20 minutes, perfect for breakfast, brunch or a simple snack.

Raisin Scones

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1/4 cup (plus 1 tablespoon) sugar divided
  • 1 tablespoon baking powder
  • 1/2 cup butter cut into small pieces
  • 1 large egg lightly beaten
  • 1/2 cup raisins
  • 1/3 cup skim milk
  • 1 tablespoon sugar
  • 1/4 teaspoon cinnamon

Instructions

  • Preheat oven to 400°F. Lightly spray cookie sheet with nonstick cooking spray.
  • In a large bowl, combine flour, oats, 1/4 cup sugar and baking powder. Add butter and mix until the dough is crumbly.
  • Stir in egg, raisins and milk. Knead for a few minutes until all ingredients are moistened.
  • Turn dough onto cookie sheet and spread to form 8 to 10-inch circle. With a butter knife, cut circle into 8 triangles. Sprinkle with 1 Tbsp. sugar and cinnamon.
  • Bake 12-15 minutes, or until golden brown.
