Raisin Scones
Easy homemade raisin scones with oats and cinnamon sugar — soft, crumbly and ready in 20 minutes, perfect for breakfast, brunch or a simple snack.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup quick oats
- 1/4 cup (plus 1 tablespoon) sugar divided
- 1 tablespoon baking powder
- 1/2 cup butter cut into small pieces
- 1 large egg lightly beaten
- 1/2 cup raisins
- 1/3 cup skim milk
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon
Instructions
- Preheat oven to 400°F. Lightly spray cookie sheet with nonstick cooking spray.
- In a large bowl, combine flour, oats, 1/4 cup sugar and baking powder. Add butter and mix until the dough is crumbly.
- Stir in egg, raisins and milk. Knead for a few minutes until all ingredients are moistened.
- Turn dough onto cookie sheet and spread to form 8 to 10-inch circle. With a butter knife, cut circle into 8 triangles. Sprinkle with 1 Tbsp. sugar and cinnamon.
- Bake 12-15 minutes, or until golden brown.
