Summer Crispy Tostada

This crispy tostada is layered with fresh toppings and bold flavor. It is an easy, crunchy meal perfect for summer lunches or dinners.

Summer Crispy Tostada, black beans, lettuce and salsa

Ingredients

  • 3 medium plum tomatoes chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon hot sauce
  • 12 corn tortilla tostadas
  • 1 (15 oz.) can black beans drained and rinsed
  • 1 1/2 cups queso fresco or goat cheese crumbled
  • 6 leaves iceberg or Romaine lettuce shredded

Instructions

  • In a medium bowl, mix tomatoes, cilantro, onion, lime juice and hot sauce. Set aside.
  • To assemble, place each tostada on a plate. Top with beans, cheese, lettuce and salsa.
