Prepare pasta according to package directions. Drain and transfer to a large bowl.
Meanwhile, heat oil in a large skillet over medium heat. Add sausage and cook 2-3 minutes, or until well browned. Add mushrooms, leeks and onions, and cook 5-6 minutes, or until tender. Add chicken stock and simmer 3-5 minutes.
Add sausage and vegetables to warm pasta. Add cheese, parsley and tarragon. Toss to combine. Season with salt and pepper, to taste.
