Cobb Salad Sandwich
First created in California, Cobb salad traditionally includes an array of tasty ingredients, like avocado, egg, chicken, tomato, and bacon. In our version, all these toppings are found in between Martin’s Old-Fashioned Real Butter Bread.

Ingredients
Brown Derby Old-Fashioned Dressing
- 1 cup olive oil
- 1/4 cup water
- 1/4 cup red wine vinegar
- 1/2 lemon juiced
- 1 teaspoon Dijon mustard
- 1 teaspoon ground black pepper
- 3/4 teaspoon salt
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon sugar
Sandwich Ingredients
- 1 chicken breast cut into strips
- 2 slices Martin’s Old-Fashioned Real Butter Bread
- 3 strips cooked bacon
- 3 leaves romaine lettuce
- 1 medium tomato sliced
- 1 avocado thin-sliced
- 1 hard-boiled egg sliced
- 1/2 cup watercress
- 2 tablespoons crumbled Roquefort cheese (or substitute blue cheese)
- 1/2 tablespoon chopped chives
- 1/4 cup mayonnaise
Instructions
- Whisk oil, water, vinegar, lemon juice, mustard, pepper, salt, Worcestershire and sugar until well incorporated. Set aside ¼ cup of prepared dressing.
- Add chicken to the remainder of the dressing. Cover and let marinate 20 minutes.
- Grill marinated chicken over medium heat until thoroughly cooked.
- Toast bread. Layer with chicken, bacon, lettuce, tomato, avocado, egg, watercress, cheese and chives.
- Combine mayonnaise with ¼ cup dressing that was set aside and mix thoroughly. Carefully drizzle over top of sandwich. Top with other slice of toasted bread.
