Chorizo con Papas Flatbread

Ingredients
- 1 tablespoon olive oil
- 1 jalapeno diced
- ½ small red onion chopped
- 1 (32 oz.) bag diced southern hashbrowns thawed
- 1 (10 oz.) package frozen plant-based chorizo crumbles
- 6 round pitas
- 6 tablespoons crumbled queso fresca or feta cheese
Instructions
- Heat oil in skillet over medium heat. Add jalapeno and onion, cook 3-5 minutes or until soft. Add hashbrowns and chorizo. Cook 10 minutes or until heated through.
- Spoon about 1 cup chorizo mixture on to each pita and sprinkle with cheese. Cut into triangles and serve.
