Chorizo con Papas Flatbread

Chorizo con Papas Flatbread

Ingredients

  • 1 tablespoon olive oil
  • 1 jalapeno diced
  • ½ small red onion chopped
  • 1 (32 oz.) bag diced southern hashbrowns thawed
  • 1 (10 oz.) package frozen plant-based chorizo crumbles
  • 6 round pitas
  • 6 tablespoons crumbled queso fresca or feta cheese

Instructions

  • Heat oil in skillet over medium heat. Add jalapeno and onion, cook 3-5 minutes or until soft. Add hashbrowns and chorizo. Cook 10 minutes or until heated through.
  • Spoon about 1 cup chorizo mixture on to each pita and sprinkle with cheese. Cut into triangles and serve.
