Cheesy Black Bean Toast with Pico de Gallo (Molcahetes)

Ingredients

Roma tomatoes
diced

serrano or jalapeño peppers
finely chopped

clove
garlic
finely minced
1
lime
juiced
1/2
medium
onion
finely chopped

chopped fresh cilantro

oregano
1/8
teaspoon
salt

teaspoon
pepper

Kaiser rolls
sliced in half lengthwise
1 (16 oz.)
can
seasoned lowfat refried black beans

cups
shredded Chihuahua or mozzarella cheese

Hass avocado
diced
Instructions
Preheat oven to 350°F.
In a medium bowl, combine tomatoes, peppers, garlic, lime juice, onion, cilantro, oregano, salt and pepper. Set aside.
Place bottom half of rolls on a baking sheet. Spread refried beans on top and sprinkle with cheese.
Bake 5-8 minutes, or until cheese is melted and hot. Top with pico de gallo and avocado.
