Best of Summer Avocado Veggie Sandwich
The ideal sandwich for a summer picnic or your everyday brown bag lunch. This instant favorite brightens seasonal vegetables with a kick of Italian dressing.

Ingredients
- 1/2 avocado peeled
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon salt
- 4 slices whole wheat bread
- 1 Roma tomato sliced
- 2/3 cup sliced sweet bell peppers
- 1/2 cup sliced cucumbers
- 2 tablespoons red wine vinegar
- 2 romaine lettuce leaves
Instructions
- Combine avocado, lemon juice and salt in small bowl. Spread mixture evenly over 2 slices of bread.
- Place tomatoes, peppers and cucumbers on a covered surface. Drizzle with vinegar.
- Layer lettuce, tomato, cucumbers and peppers on top of avocado. Top with remaining slices of bread.
