Banana Bread

Ingredients
- 3 large ripe bananas
- 3/4 cup sugar
- 3/4 cup vegetable oil
- 2 large eggs or ½ cup egg substitute
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
Instructions
- Preheat oven to 325°F. Spray a loaf pan with non-stick cooking spray and set aside.
- Place bananas in a large bowl and mash. Mix in sugar, oil, eggs and vanilla until smooth.
- In a seperate bowl, whisk together flour, baking soda, baking powder and salt.
- Fold dry ingredients into wet ingredients until well incorporated. Pour into prepared loaf pan.
- Bake 60-70 minutes, or until a knife comes out clean. Remove from oven and let cool before slicing.
