sugar

vegetable oil

eggs
or ½ cup egg substitute

vanilla

all-purpose flour

baking soda

teaspoon
baking powder

teaspoon
salt
Instructions
Preheat oven to 325°F. Spray a loaf pan with non-stick cooking spray and set aside.
Place bananas in a large bowl and mash. Mix in sugar, oil, eggs and vanilla until smooth.
In a seperate bowl, whisk together flour, baking soda, baking powder and salt.
Fold dry ingredients into wet ingredients until well incorporated. Pour into prepared loaf pan.
Bake 60-70 minutes, or until a knife comes out clean. Remove from oven and let cool before slicing.
