English Muffin Breakfast Casserole

Combine all the flavors of your favorite breakfast sandwich into one easy, make-ahead casserole. Great for meal prep, busy weekdays or holiday weekends.

English Muffin Breakfast Casserole

Ingredients

  • 8 English Muffins cut into 1-inch cubes
  • 16 ounces cooked turkey or ham diced
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups 2% milk
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  • Preheat oven to 350°F. Grease a 13×9-inch casserole dish.
  • Add bread cubes, turkey or ham, and cheese. Mix until incorporated.
  • In a medium bowl, whisk eggs, milk, salt and pepper. Pour over dry ingredients and mix well. Cover with aluminum foil.
  • Bake 45 minutes. Remove foil and bake additional 15-20 minutes, or until golden brown.
