Mediterranean Tuna Salad Sandwich
Tuna, artichokes and white beans tossed with flavorful basil pesto create a delicious twist on tuna salad.

Ingredients
1 (12 oz.)
can
tuna
packed in water, drained
1 (15 oz.)
can
white beans
drained, rinsed
1 (14 oz.)
can
artichoke hearts
drained, chopped
¼
cup
pesto
¼
cup
lowfat mayonnaise

tablespoons
lemon juice
¼
teaspoon
black pepper

lettuce leaves
6
slices
whole grain bread
toasted
Instructions
Mix tuna, beans, artichoke hearts, pesto, mayonnaise, lemon juice and pepper in medium bowl until well combined.
Assemble 3 sandwiches with 2 lettuce leaves and ½ cup tuna salad each.
