Chipotle Meatballs in Spicy Sauce with Rice
Olé! We’re spicing up spaghetti and meatballs with a Mexican flair. Plenty of chipotle pepper keeps things interesting, while a bed of rice offers a balance to the dish.

Ingredients
Sauce
- 1 (14.5 oz) can diced tomatoes
- 1 small white onion quartered
- 2 cloves garlic chopped
- 1/4 cup hot sauce
- 1 cup fat-free chicken broth
Meatballs
- 1 cup dried bread crumbs
- 1/4 cup milk
- 2 pounds lean ground beef or turkey
- 1/2 cup chipotle pepper sauce
- 1/2 cup sliced green onions
- 2 large eggs
- 1/2 cup chopped cilantro
Instructions
- Place tomatoes, onion, garlic and hot sauce in blender or food processor. Blend until smooth.
- Pour tomato mixture and broth into large sauce pan and bring to a boil; lower heat and simmer 8-10 minutes.
- While sauce simmers, mix bread crumbs and milk in small bowl. Set aside.
- Mix ground beef, chipotle sauce, green onions, soaked bread crumbs, eggs and cilantro in a large bowl.
- Shape 2-3 tablespoons of beef mixture into a ball. Drop formed meatballs into simmering sauce, cover, and continue to simmer, stirring occasionally, 30-35 minutes. Serve over hot rice.
