Turkey Burger with Mozzarella and Roasted Red Peppers
This turkey burger with mozzarella and roasted red peppers is juicy, flavorful and a lighter twist on a classic burger. Perfect for a backyard cookout or weeknight meal.

Ingredients
- 2 red bell peppers
- 1 pound ground turkey
- 1/4 cup diced onion
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 slices part-skim mozzarella cheese
- 4 100% whole wheat hamburger buns
- 1 avocado sliced
Instructions
- Preheat oven to 450°F.
- Cut peppers in half and remove the seeds and stem. Place cut-side-down on a aluminum foil-lined baking sheet.
- Bake, turning every 15 minutes, until blackened on all sides, about 30 minutes total.
- Remove from oven and place in a covered bowl. As steam from the peppers condenses, the skin becomes easier to peel off. Once peppers have cooled, carefully peel off the blackened skin and discard. You can do this with your fingers or a sharp paring knife.
- Meanwhile, mix turkey, onion, vinegar, oregano, salt and black pepper in a bowl until combined. For into 4 equal patties.
- Heat large skillet over medium heat. Add patties and cook 4-5 minutes per side, or until internal temperature reach 165°F.
- Top with cheese and roasted red peppers and keep on heat until cheese melts.
- Assemble buns topped with burger and avocado.
