Huevos Rancheros Burrito
A delicious and full of nutrients burrito your kids will be asking for every day.

Cook Time: 5 minutes

Ingredients
- 1 (15 oz.) can black beans drained and rinsed
- 1/4 cup salsa
- 8 large eggs beaten
- 4 medium whole grain tortillas
- 4 slices cheese
- 1 large avocado thinly sliced
- 1 medium tomato thinly sliced
Instructions
- Puree beans and salsa in a blender or food processor. Set aside.
- Heat medium skillet over medium heat. Spray with nonstick cooking spray and add eggs. Cook, stirring constantly, 3-5 minutes or until fluffy and cooked through.
- Assemble tortilla by spreading with bean puree. Top with cheese, eggs, avocado and tomato. Roll up and cut in half.
