Roast Beef and Arugula Sandwich

This easy roast beef and arugula sandwich with horseradish mayo, tomato and whole grain bread is ready in minutes for a healthy, protein-packed lunch.

Roast Beef and Arugula Sandwich

Ingredients

  • 1 tablespoon lowfat mayonnaise
  • 2 teaspoons horseradish
  • 4 slices whole wheat bread
  • 4 slices tomato
  • 4 ounces lean roast beef thinly sliced
  • 1 cup arugula

Instructions

  • Mix mayonnaise and horseradish. Spread on one side of 2 slices of bread.
  • Layer tomato, roast beef and arugula on top. Top with remaining slices of bread, creating 2 sandwiches.
