Roast Beef and Arugula Sandwich
This easy roast beef and arugula sandwich with horseradish mayo, tomato and whole grain bread is ready in minutes for a healthy, protein-packed lunch.

Ingredients
- 1 tablespoon lowfat mayonnaise
- 2 teaspoons horseradish
- 4 slices whole wheat bread
- 4 slices tomato
- 4 ounces lean roast beef thinly sliced
- 1 cup arugula
Instructions
- Mix mayonnaise and horseradish. Spread on one side of 2 slices of bread.
- Layer tomato, roast beef and arugula on top. Top with remaining slices of bread, creating 2 sandwiches.
