Ingredients
  

  • 1/2 avocado peeled
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon salt
  • 4 slices whole wheat bread
  • 1 Roma tomato sliced
  • 2/3 cup sliced sweet bell peppers
  • 1/2 cup sliced cucumbers
  • 2 tablespoons red wine vinegar
  • 2 romaine lettuce leaves

Instructions
 

  • Combine avocado, lemon juice and salt in small bowl. Spread mixture evenly over 2 slices of bread.
  • Place tomatoes, peppers and cucumbers on a covered surface. Drizzle with vinegar.
  • Layer lettuce, tomato, cucumbers and peppers on top of avocado. Top with remaining slices of bread.
