  • 6 in bolillos or large Kaiser rolls slicedhalf, lengthwise
  • 1 can seasoned low fat refried black beans 16 oz
  • 2 cups shredded Chihuahua cheese or Mozzarella cheese shredded
  • 6 tomatoes preferably Roma (or 3 large tomatoes), diced
  • 1⁄2 medium onion finely chopped
  • 1 clove garlic finely minced
  • 2 serrano or jalapeño peppers finely chopped
  • 3 tablespoons fresh cilantro chopped
  • Juice of 1 lime
  • 1⁄8 teaspoon oregano finely crushed
  • 1⁄8 teaspoon salt optional
  • 1⁄8 teaspoon pepper
  • 1⁄2 Hass avocado diced

  1. Preheat oven to 350° F.
  2. In a medium mixing bowl, combine all the salsa ingredients; set aside.
