Orzo Salad with Feta Cheese & Avocado

Orzo Salad with Feta Cheese & Avocado

Ingredients

  • 16 ounces large grain orzo
  • 2 pints cherry tomatoes halved
  • 6 ounces crumbled feta cheese
  • 2 avocados diced
  • 1/2 cup chopped green onions
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried marjoram
  • 1 orange juiced
  • 1 lemon zested

Instructions

  • Prepare orzo according to package directions. Drain and let it cool.
  • Add tomatoes, feta, avocados, green onions, garlic, olive oil, salt, marjoram, orange juice and lemon zest to cooled pasta. Toss to mix well.
  • Cover and refrigerate 30 minutes before serving.
