Ingredients
Broccoli Pesto Sauce
- 15 basil leaves
- 2 cups chopped broccoli florets
- 4 tablespoons olive oil
- 2 tablespoons pine nuts
- 2 tablespoons whole milk
- 1 clove garlic
Toppings
- 1 zucchini sliced
- 1 bell pepper sliced
- 1 small red onion sliced
- 1 tablespoon olive oil
- 1 ½ teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 4 pizza flatbreads
Instructions
- Preheat oven to 350°F.
- In a blender, add basil, broccoli, oil, pine nuts, milk and garlic. Blend until smooth. (It will be a little thick. You may add more milk for a thinner consistency.)
- In a medium bowl, mix zucchini, peppers and onions with oil and Italian seasoning.
- Place flatbreads on a baking sheet and spread 2-3 tablespoons broccoli pesto sauce on top. Top with marinated vegetables and cheese.
- Bake 5-8 minutes, or until cheese melts.
