Ingredients
  

Broccoli Pesto Sauce

  • 15 basil leaves
  • 2 cups chopped broccoli florets
  • 4 tablespoons olive oil
  • 2 tablespoons pine nuts
  • 2 tablespoons whole milk
  • 1 clove garlic

Toppings

  • 1 zucchini sliced
  • 1 bell pepper sliced
  • 1 small red onion sliced
  • 1 tablespoon olive oil
  • 1 ½ teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 4 pizza flatbreads

Instructions
 

  • Preheat oven to 350°F.
  • In a blender, add basil, broccoli, oil, pine nuts, milk and garlic. Blend until smooth. (It will be a little thick. You may add more milk for a thinner consistency.)
  • In a medium bowl, mix zucchini, peppers and onions with oil and Italian seasoning.
  • Place flatbreads on a baking sheet and spread 2-3 tablespoons broccoli pesto sauce on top. Top with marinated vegetables and cheese.
  • Bake 5-8 minutes, or until cheese melts.
