Asian Ginger Turkey Burgers

Ingredients
Mango Cilantro Mayonnaise
- 1/2 cup light mayonnaise
- 2 teaspoon lime juice
- 1 teaspoon honey
- 1 medium mango peeled and diced
- 1 tablespoon fresh cilantro chopped
- ground black pepper to taste
Turkey Burger Ingredients
- 1 pound lean ground turkey
- 3 green onions chopped
- 2 tablespoon plain bread crumbs or old-fashioned oats
- 2 tablespoon peanut butter
- 1 tablespoon minced ginger root
- 1 tablespoon low-sodium soy sauce
- 1 clove garlic chopped
- Pinch red pepper
- ground black pepper to taste
- Shredded lettuce
- Fresh cilantro
- 4 kaiser rolls or hamburger buns
Instructions
- In a medium bowl, combine mayonnaise, lime juice and honey; stir in mango, cilantro and black pepper. Cover; store in refrigerator until ready to use.
- Heat oven broiler.
- In a large bowl, mix turkey, onions, bread crumbs or oats, peanut butter, ginger, soy sauce, garlic, red pepper and black pepper. Form into four to six patties and place on baking sheet.
- Broil 4 minutes on each side, or until medium well.
- Spread mango mayonnaise on rolls; top with patties, lettuce and fresh cilantro.
