Asian Ginger Turkey Burgers

Ingredients
Mango Cilantro Mayonnaise
- 2 tsp lime juice
- 1/2 cup light mayonnaise
- 1 tsp honey
- 1 medium mango peeled and diced
- 1 Tbsp fresh cilantro chopped
- ground black pepper to taste
Turkey Burger Ingredients
- 1 lb ground turkey breast meat only
- 3 green onions chopped
- 2 Tbsp plain bread crumbs
- 2 Tbsp peanut butter
- 1 Tbsp ginger root minced
- 1 Tbsp low-sodium soy sauce
- 1 clove garlic chopped
- pinch red pepper
- ground black pepper to taste
- lettuce and fresh cilantro
- 4 kaiser rolls or hamburger buns halved
Instructions
- In a medium bowl, combine lime juice, mayonnaise and honey; stir in mango, cilantro and black pepper. Cover; store in refrigerator until ready to use.
- Heat oven broiler.
- In a large bowl, mix turkey with onions, bread crumbs, peanut butter, ginger, soy sauce, garlic, red pepper and black pepper. Form into four to six patties; cook under broiler, about 4 minutes each side or until medium well.
- Spread mango mayonnaise on rolls halves; top with patties, lettuce, fresh cilantro and roll top.
