
Caesar Salad Sandwich with Avocado
This delicious Caesar Salad Sandwich is everything you love about chicken Caesar salad (flavorful parmesan cheese, fresh leafy lettuce and crispy grilled chicken) in between two slices of Martin’s Potato Bread.

Ingredients
- 4 tablespoons olive oil divided
- 2 tablespoons chopped parsley
- 1 lemon juiced
- 1 teaspoon fresh thyme leaves
- 1 1/2 pounds boneless, skinless chicken breasts sliced into strips
- 4 tablespoons butter melted
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 8 slices Martin's Potato Bread
- Green leaf lettuce
- 2 avocados sliced
- 1/2 cup Caesar dressing
- 1/3 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F.
- Whisk together 3 Tbsp. olive oil, parsley, lemon juice and thyme in large bowl. Add chicken and toss to coat. Cover and refrigerate at least 30 minutes.
- Heat 1 Tbsp. olive oil in medium skillet over medium-high heat. Add chicken and cook 7-8 minutes, or until cooked through. Remove and let rest 5 minutes.
- Mix melted butter, garlic powder and Italian seasoning in a small bowl. Brush over both sides of each slice of bread. Arrange slices on a large baking sheet and bake 5 minutes, or until golden brown.
- To assemble sandwich, layer lettuce on top of a slice of toasted bread, then add chicken, avocado and drizzle with dressing. Sprinkle with cheese and add another layer of lettuce before topping with a slice of bread.
