Bring your appetizers up a notch with these smoky-sweet popovers that are sure to please your crowd. They’ll never know the recipe only takes a few minutes of prep work.
Preheat oven to 450°F with oven rack in the lower third of the oven. Preheat a 12-cup muffin tin in the oven while you prepare the batter.
In a large bowl, whisk eggs and milk for 1 minute, or until frothy. Add flour, salt and black pepper. Whisk until well combined. There may be some small lumps remaining.
In separate bowl, mix goat cheese and honey.
Remove muffin tin from oven and spray with cooking spray. Divide batter among the cups, filling about 3/4 full. Drop 1 tsp. goat cheese into center of each cup, dividing it evenly.
Bake 15 minutes, then lower temperature to 350°F and bake 15-20 minutes, until puffed up and browned. Remove from oven and immediately turn out onto a wire rack. Serve immediately.
